Moving /usr to another disk

I need to move /usr to another(larger) disk. I have never done this before and
was planning on just tarring it into a file, moving that file to the other
disk, untarring it, making the changes to /etc/fstab, and rebooting.

Are there any pitfalls I should be aware of?
