vi : How to insert special characters

     Hello sysmans,
     
     I'd like to use vi to insert special characters in a file.
     
     I'd like for example to insert the Hex-code 'ed1f' (two octets) in an
     normal ascii file. How can I do this ? I only know how to insert ESC
     sequences using CTRL V.
     
     I've tried the 'beav' tool, but I don't really know how to use it.
     Where can I find any documentation ?
