Timezone question

Hi,

We normally use GMT-5 with no daylight saving time. This normally works
for us, but sometimes (very rare), we´ve found that after a power
off/on, the system looses exactly 5 hours. We used to change it
inmediately, but we still don´t know the real reason for that time
change. Does the GMT-5 timezone have to do with this behavior ? If we
use for example GMT-10, should we expect (under some circumstances) a
10-hours delay ?

Can anybody explain us how the timezone works ?
