Backups using 3 way mirrors

Has anyone had any experience using a 3-way mirrorset on an HSG80 (or similar) to do snapshot-type backups? We've been thinking about creating a 3-way mirrorset, from which 1 disk could be removed and re-mounted for backup purposes each night, and then re-integrated at the end.

Are there any known caveats here (like it being a stupid idea).
