I've had two queries about my summary.
Sorry for any confusion, but the original question was about backing up live
systems.

Ah, sorry for the confusion. Should have had the word 'live' in there.
I was asking whether quiescence is needed, and the answer is yes. The way
around it is to use AdvFS and backup a clone. If you can unmount your
disks or you have a quiet time when processes aren't writing to the disk,
then dump on UFS is fine.
Backing up a live UFS partition using dump causes problems if in the
time that the dump is taking place, blocks/inodes are allocated or
freed. The dump may not be consistent. Whole directory subtrees can
be lost...
