Sendmail 8.9.1 compiled, now what?

Ok... I got sendmail 8.9.1, and compiled it ok as far as I can tell... now
what?
I checked www.sendmail.org and I can't see what to do next...
I copied the sendmail binary to /usr/sbin and tried to start with my old
.cf file and got:

And does anyone have any suggestions for how to disable mail relaying and
change the "from" address not to show the server name (I think it's called
masquerading)

And since it's not running yet... can anyone help with masquerating and
relay/hub?
ie: I want all mail going out to be labeled as _at_phy.syr.edu instead of
_at_hostname.phy.syr.edu. How and where can I do this?

Also... we have one central server... I'd like any mail sent to other
servers to be relayed/forwarded to the mail hub.... how & where can I do this?
