I guess it helps to review Sendmail's FAQ when you get errors :-)
The answer is simple, add the pop.domain.com (and any other possible
domain.com names) to
/etc/mail/local-host-names
/etc/mail/sendmail.cw
/etc/sendmail.cw
depending on your version of Sendmail
Once added, restart Sendmail
kill -HUP `head -1 /var/run/sendmail.pid`
After a couple of tests, it looks like this fixed the problem.

from the MAILER-DAEMON_at_server.domain.com. The subject is

Message sample:

553 pop.domain.com. config error: mail loops back to me (MX problem?)
554 <user_at_pop.domain.com>... Local configuration error
