Changing mail Servers!

Hi all, we currently run two DEC servers a 2100 that has our Database,
Mail, and Web server. We also have a 800 that runs another small
application, and is really under utilized. I would like some information in
the steps needed to make out other server our mail server and able to
accept and send mail.
