You probably have some processes that send mail out to other machines (e.g., cron, when something goes wrong in executing a crontab file entry), and these will result in one invocation of sendmail per message. My guess is that you need to add your own IP address and host name in /etc/hosts. Also, if you don't have a top level domain name (e.g., because this is an isolated network) you may get into all sorts of trouble because of software that expects you to have one.
